The red color comes from high concentrations of iron, and you can't actually eat the wheat or the flour without some treatment, because there's too much iron in it. Eating a handful of grains probably won't kill you, but making a habit of eating bread made of un-treated flour would certainly kill you from heavy metal toxicity.
