Unfortunately, I have no better idea what a Greater Sagefish is than I do a regular Sagefish. All I know is that its icon is quite literally a purple recolor of the original Sagefish, and it conveniently appears in somewhat higher-level zones. Does this mean it's a larger, older, or more magically sophisticated member of the same species? Possibly. But I have absolutely no evidence for any of these hypotheses. So, I've once again reconstructed it as a fantasy sunfish, this time with purple coloration, swimming through the murky waters of Dustwallow Marsh. Until further evidence emerges, my provisional taxonomic classification remains: Sagefish, but purple. And greater. Apparently, that's how evolution works in Azeroth.
